Ingredients for 1 servings:

  • 300 g flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 175 g butter, soft
  • 6 tbsp water (ice water)
  • 1 ½ kg apples
  • 125 g sugar
  • 50 g brown cane sugar
  • 2 tbsp flour
  • 1 lemon(s), zest and juice
  • 1 pinch of nutmeg
  • 1 tbsp milk

Working time approx. 45 minutes; Cooking/baking time approx. 1 hour 25 minutes; Total time approx. 2 hours 10 minutes

For the dough, sift the flour into a bowl and mix with the sugar and salt. Add the butter in small pieces and rub everything in with your fingers until it forms a crumbly mixture. Then knead with enough ice-cold water until you have a smooth, easily pliable shortcrust pastry. Wrap the dough in cling film and place in the refrigerator. Peel and core the apples and cut them into wedges. Drizzle with the lemon juice. Mix the sugar, cane sugar, flour, lemon zest, nutmeg and, if desired, a little more cinnamon in a bowl and fold in the apple slices. Take the dough out of the refrigerator and divide it in half. Roll out one half and line a springform pan or pie dish with it. Arrange the apples on it, mounding them slightly in the middle. Then roll out the remaining dough and cut out strips about 1.5 cm wide. Place them over the apples to form a lattice and press down the edges firmly. Brush the dough with the milk. Bake in a preheated oven at 200°C (top/bottom heat) on the lowest rack for about 10 minutes, then reduce the temperature to 180°C (350°F) and bake for another 60-75 minutes, until the lattice strips have a light crust. The filling will combine with the apple juice that releases during baking, creating a particularly delicious filling.
