Marzipan raisin cookies

Ingredients for 1 servings:

  • 50 raisins
  • 3 tbsp Baileys Irish Cream
  • 125 g margarine (Sanella)
  • 250 g raw marzipan mixture, roughly chopped
  • 1 packet of vanilla sugar
  • 1 egg yolk
  • 250 g flour
  • 2 pinches of baking powder
  • 50 g sugar
  • 1 pinch of salt
  • Powdered sugar, for sprinkling

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Soak the raisins in Baileys overnight. Drain the next day, reserving the Baileys. Combine the margarine, marzipan, vanilla sugar, sugar, salt, and egg yolk. Mix the flour and baking powder, add to the egg mixture along with the remaining Baileys, and knead until smooth. Shape the dough into a log (approx. 2.5 cm) and cut approximately 1 cm thick slices. Shape each slice into a log, press a raisin into the center, and place on baking paper. Bake in a preheated oven at 175°C for approx. 15 minutes. Remove from the oven, allow to cool, and sprinkle lightly with powdered sugar.
