Summer salad with watermelon, cucumber and mango

Ingredients for 4 servings:

  • 250 g watermelon(s), preferably seedless, weighed without peel
  • 250 g cucumber(s), organic, pitted
  • 250 g mango(s), without peel and stone
  • 1 small onion(s), red
  • 1 chili pepper(s), pitted, amount according to spiciness and taste
  • 2 tbsp mint leaves, cut into fine strips
  • 2 tbsp lime juice
  • 2 tbsp orange juice
  • 2 tbsp oil
  • salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Total time approx. 35 minutes

refreshing and light

Dice the melon, cucumber, and mango. Peel and finely chop the onion. Finely chop the chili pepper. Mix the juice, spices, and oil to make a marinade. Mix everything well and let it chill for about 20 minutes. Season again before serving.
