Potato salad with lamb's lettuce

Ingredients for 4 servings:

  • 2 ½ kg potato(s), waxy
  • 2 pts. lamb’s lettuce
  • 2 onions
  • oil
  • Vinegar
  • Salt
  • pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil, peel, and dice the potatoes. Tear apart the lamb’s lettuce leaves and finely chop the onions. Season everything with oil, vinegar, salt, and pepper (to taste). I personally toss the lamb’s lettuce in just before serving so it doesn’t fall apart too quickly.
