Gooseberry cake with meringue

Ingredients for 1 servings:

  • 250 g butter, semi-skimmed as desired
  • 300 g sugar
  • 2 packets of vanilla sugar
  • 1 lemon(s), the peel
  • 3 eggs
  • 4 egg yolks
  • 300 g flour
  • 2 packets of vanilla pudding powder
  • ½ pack of baking powder
  • 100 ml milk
  • 500 g gooseberries
  • 4 egg whites
  • 200 g sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Moist base with crispy meringue

For the batter, cream together the butter, sugar, vanilla sugar, and lemon zest until creamy. Then gradually beat in the eggs and egg yolks, one at a time. Combine the flour with the custard powder and baking powder, and sift into the batter alternately with the milk. Spread the batter onto a greased baking sheet. Spread the gooseberries on top. Beat the egg whites with a little salt until stiff, then drizzle in the sugar and spread the mixture over the gooseberries. Bake at 175°C for about 35-40 minutes. Using low-fat butter, each piece contains only 170 kcal.
