Quick chicken curry

Ingredients for 3 servings:

  • 400 g chicken breast fillet(s)
  • 1 onion(s), diced
  • 2 large carrots
  • 1 red bell pepper(s)
  • 400 ml coconut milk
  • 2 tbsp curry powder
  • e.g. chili powder
  • e.g. paprika powder
  • e.g. salt and pepper
  • some oil
  • 1 shot of orange juice

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

with coconut milk

Cut the chicken into small pieces and fry with the onion in a little oil. Add the thinly sliced ​​carrots. Sauté them briefly, then add the sliced ​​bell pepper. Continue frying briefly, then pour in the coconut milk and bring to a boil. Add a dash of orange juice. Season with curry powder, paprika, salt, pepper, and chili. Simmer until the desired consistency is reached. Serve with rice.
