Currywurst in sauce with homemade fries

Ingredients for 6 servings:

  • 6 sausages (giant curry), approx. 300 g each
  • 1 can of tomato paste, 125 g
  • 2 tsp curry powder
  • 1 tbsp cayenne pepper
  • 250 ml orange juice
  • Salt and pepper, from the mill
  • 1 pinch(s) of sugar
  • Broth, granulated
  • 2 star anise
  • olive oil
  • 8 potatoes (baked)
  • Fat, for frying

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the curry sauce, sauté tomato paste in olive oil. Add curry powder and cayenne pepper and sauté, then deglaze with orange juice. Stir in a little granulated stock and bring everything to a boil. Season with salt, pepper, and star anise. Thin with a little water, if desired. For the fries, cut 8 baked potatoes into strips approximately 3 x 3 cm thick and 8 cm long. Blanch the potato sticks in boiling salted water for 2 to 4 minutes. Then fry them in a pan of fat until golden brown. Fry the curry sausages until golden brown. Serve with the sauce and fries.
