Ingredients for 4 servings:

  • 500 g potatoes, mostly waxy
  • 300 g savoy cabbage, fresh
  • Milk
  • butter
  • Salt
  • pepper
  • nutmeg
  • 4 pieces of smoked sausages
  • Fat, for frying

Clean the potatoes, boil them with the skin on in salted water for about 20-30 minutes, then drain the water, peel them, and mash them with milk, butter, salt, pepper, and nutmeg. Trim and wash the savoy cabbage, cut into strips, and cook in salted water for about 15-20 minutes. Drain and stir into the mashed potatoes. Meanwhile, fry the sausages, whole or sliced, in a pan with oil. Divide the mashed potatoes among plates, add the sausages, and serve. I like to use “party schmalz” (a kind of sauce) with the sausages, which is made with onions, apples, and herbs, and serve it as a side dish.
