Ingredients for 1 servings:

  • 250 g flour
  • 1 sachet of vanilla sugar
  • 2 bags orange peel, grated
  • 75 g powdered sugar
  • 1 pinch of salt
  • 100 g ground almonds
  • 200 g butter
  • 100 g sugar

Instructions

Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

Place the flour, vanilla sugar, 1 sachet of orange zest, powdered sugar, salt, and ground almonds in a mixing bowl. Mix well with a whisk. Add the butter in small pieces and quickly knead everything into a smooth dough using the dough hook of a hand mixer. Cover and chill for about 30 minutes. Preheat oven to 180°C (160°C fan-assisted oven). Divide the croissant dough into 5 portions and shape into finger-thick rolls on a floured work surface. Cut the rolls into pieces about 5cm long. Roll the ends a little thinner and shape the pieces into croissants. Place each piece on a baking tray lined with baking paper, leaving some space between them. Bake for about 10 minutes per tray. Mix the sugar well with the remaining orange zest and spread on a baking tray. After baking, let the croissants rest for a short while and then carefully roll them in the sugar mixture while still hot. Let cool and then transfer to the baking tin.
