Strawberry muffins

Ingredients for 12 servings:

  • 250 g strawberries
  • 140 g butter
  • 100 g sugar
  • 3 eggs
  • 2 packets of vanilla sugar
  • 240 g flour
  • 2 tsp baking powder
  • 250 g quark
  • 100 ml water

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 40 minutes

Wash the strawberries and cut them into small cubes. Mix the butter, sugar, and vanilla sugar until fluffy. Add 1 egg and 2 egg yolks. Stir the quark into the batter. Then add the flour, baking powder, and water. Beat the egg whites until stiff and fold them into the batter. Carefully fold in the strawberry pieces with a spatula to prevent them from becoming mashed. Bake at approximately 180 degrees Celsius (convection oven) (preheat) for 20-25 minutes. Tip: It’s best to line the muffin tin with paper baking cups. It looks nicer, too. These muffins are semi-healthy, as you can see from the list of ingredients. The butter can also be replaced with margarine. Sugar is a bit tricky, though.
