Ingredients for 4 servings:

  • 8 dumplings (bread dumplings), from the day before
  • 8 eggs
  • salt and pepper
  • 2 tbsp butter
  • e.g. chopped parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

tasty leftover utilization

Slice the bread dumplings (2 per person) into thin slices and fry them with butter in a pan (heavy cast iron skillet). Then add the beaten eggs and season with salt and pepper. Mix well until something like a dumpling and egg pancake forms. Serve in the pan and sprinkle with chopped parsley. Serve with a green salad. Kids usually add ketchup.
