Cheesecake with erythritol

Ingredients for 8 servings:

  • 1 kg quark
  • 3 eggs
  • 300 g erythritol (sugar substitute)
  • 1 packet of vanilla sugar
  • 2 packets of vanilla pudding powder
  • 1 pinch of salt
  • 1 tsp baking powder
  • 250 g butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Melt the butter. Preheat the oven to 175°C. Beat the eggs with the erythritol until frothy, then stir in the other ingredients, finally adding the butter and mixing everything well again. Pour the quark mixture into a greased springform pan or a silicone mold. Bake for 60 minutes in the lower third of the oven at 175°C. Cover with aluminum foil halfway through the baking time, if necessary. Allow the cake to cool completely and then turn out onto a cake plate. If you want to bake the cheesecake with fruit, pour some of the cake mixture into the springform pan. Then add the fruit (e.g. tangerines, cherries, etc.) to the quark mixture and then the rest of the quark mixture on top. The baking time can then be extended by about 10 minutes, depending on how much fruit is added.
