Ingredients for 4 servings:

  • 1 cup bulgur, fine
  • 1 cup of boiling water
  • 2 tbsp paprika paste
  • 1 tube(s) Tomato paste
  • 2 tomatoes
  • ½ cucumber(s)
  • 1 tbsp lemon juice
  • ½ bunch parsley, flat
  • 2 cloves garlic
  • 50 ml sunflower oil
  • cumin
  • salt and pepper
  • Turkish hot pepper (Aci toz Biber)

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Turkish bulgur

Place the bulgur in a bowl and pour over a cup of boiling water. Cover the bowl with a tea towel and let it rest for 10 minutes. Meanwhile, chop the cucumber and tomatoes. Mix all ingredients into the bulgur and stir well. Add seasonings to taste. It’s best to let it stand overnight; it tastes even better! We like to eat the couscous with buttered bread.
