Almond Cracker Cookies

Ingredients for 1 servings:

  • 150 g butter
  • 250 g sugar
  • 100 g honey
  • 400 g almond flakes

Christmas cookies, old family recipe

Heat the butter in a saucepan, add the honey and sugar. Cook together for about 4 minutes and then stir the almonds into the hot mixture. Do not bring back to the boil, but keep hot and make sure the mixture does not burn. Use a teaspoon to drop small heaps of the still-hot mixture onto a baking sheet lined with baking paper. Make the heaps as large as you want the cookies to be, leaving enough space between each heap. The shape of the heaps is not so important at this point, as the mixture will spread again in the oven. Then bake in the oven at around 180°C (fan oven) for about 5 minutes, until the heaps turn a golden yellow color. When the time is right, quickly remove from the oven, place the hot heaps on a plate and shape them into the desired cookie shape. This is easiest to do with your fingers, but be careful, the mixture is still very hot. It’s best to have a second person help you: One person takes the hot mixture from the baking tray with teaspoons, while the second person immediately shapes it into cookies with their fingers (Caution: very hot!! Only touch it briefly and cool your fingers in cold water between uses). Then let the cookies cool sufficiently and then enjoy while there are some left…
