Ingredients for 4 servings:

  • 180 g flour
  • 125 ml milk, room temperature
  • 4 eggs, room temperature
  • 1 pinch of salt
  • 75 g butter, melted, may be hot
  • 250 ml milk, boiling
  • Butter for the molds

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Whisk the flour with 125 ml of milk until smooth, then gradually add the eggs, salt, and melted butter. Then stir in 250 ml of boiling milk. Pour the smooth batter into buttered, earthenware Pfitza molds (only half full) and bake in a preheated oven on the bottom rack at 220°C for approximately 30 minutes, plus 5 minutes for after-heating. Important: Do not open the oven door during baking!
