very soft, makes about 20 cookies
Chop all of the chocolate into small pieces. Mix the softened butter, sugar, and vanilla sugar with a hand mixer. Add the eggs and mix on low speed until creamy. Stir in the flour, baking powder, and salt. Fold in the finely chopped chocolate with a tablespoon (do not use a hand mixer). Place baking paper on a baking sheet or wire rack. Use a tablespoon to place small heaps on the baking paper and form them into a circle. Do not exceed a diameter of 7 cm, as the cookies will expand. This dough makes enough for about 20 cookies. Preheat the oven to 170°C fan/convection oven or 190°C conventional/top/bottom heat oven and bake the cookies for about 11-12 minutes with a fan/convection oven or about 12-13 minutes with conventional/bottom heat oven. The cookies are done when the edges are slightly golden. Remove from the oven immediately and let cool. I’ve tried many recipes, but this is the best of all! You can’t stop snacking on them. They’re similar to the ones at Subway.
