Bacon potatoes

Ingredients for 2 servings:

  • 0.7 kg potatoes, mostly waxy
  • 125 g bacon, raw or smoked
  • 4 shallots
  • 150 g unsalted butter or 2/3 of the amount of ready-made brown butter
  • Parsley, for garnishing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

First, make the brown butter (if you don’t have any). To do this, slowly heat the butter in a small saucepan over medium heat. As it simmers, the water in it evaporates and the protein clumps. Once it has turned brown and gives off a nutty aroma, drain it through a paper towel in a sieve. Peel the potatoes and boil them until soft, or pressure cook them and then peel them. Then dice them. Put the brown butter in a pan and heat over low to medium heat. Meanwhile, peel and dice the shallots. Add the shallots to the pan and fry until soft and the first diced shallots begin to turn a light brown. Now add the bacon, also diced, and fry. Then add the potatoes. Toss for about another 5 minutes, then serve everything together.
