Avocado and bacon gnocchi

Ingredients for 4 servings:

  • 2 packs of gnocchi
  • 2 avocados
  • n. B. Speck
  • 1 m.-sized onion(s)
  • 1 dashes lemon juice, freshly squeezed
  • 1 cup of cream
  • 3 garlic cloves
  • salt and pepper
  • Pinch(s) of chili salt or just chili
  • 1 tsp crème fraîche, with herbs
  • some olive oil
  • some butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

It’s quick and tastes delicious

Cook the gnocchi according to the instructions. Meanwhile, slice the avocado, remove the pit, and peel and finely chop 2 cloves of garlic. Place the avocado and garlic in a bowl, season with salt and pepper, and add the lemon juice. Blend with an immersion blender until thickly blended. Then finely dice the onions, bacon, and remaining garlic. The gnocchi should be ready by then. Strain and reserve a cup of the cooking water. Heat the olive oil and a little butter in a pan. Sauté the onions until slightly translucent. Then add the bacon and garlic. Let everything sizzle a bit, then add the gnocchi. Let it sizzle a bit more, then add the avocado mixture. Turn the heat down slightly. Add the cup of cream and stir well. Then add a little of the cooking water to make it more runny and creamy. You can use more or less, depending on your taste—or none at all. Season with salt, pepper, chili salt, and crème fraîche. If desired, you can serve the gnocchi with grated cheese or simply garnish with a few fresh basil leaves. Tip: You can also omit the bacon. It also tastes great with other pasta dishes.
