Ingredients for 2 servings:
- 1 pack of frozen shrimp
- 7 mushrooms
- 1 red bell pepper(s)
- 1 onion(s)
- 2 garlic cloves
- 2 leeks
- 2 cups basmati rice
- 4 cup(s) water, hot
- 2 tsp curry powder
- 1 tsp turmeric
- Salt
- pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Curry rice with shrimp
Defrost the frozen prawns according to the package instructions, rinse them, and pat them dry. In a small pan, fry the finely chopped garlic in a little oil and add the prawns. Sauté until the water from the prawns has evaporated. Wash and chop the remaining vegetables and mushrooms, and fry them in a pot with a little vegetable oil. Add the prawns with the garlic, the spices, and the washed basmati rice; continue to cook everything briefly. Cook for about 2 minutes. Then add the hot water, stir briefly, and taste the water to check for enough salt. Close the lid and simmer on low heat until the rice has absorbed all the water. Place a large plate on the inside of the pot and turn it over.
