Ingredients for 1 servings:
- 150 g butter
- 150 g brown sugar
- 1 egg(s)
- 200 g oat flakes, fine
- 100 g almond(s), peeled, ground
- 1 tsp baking powder
- 1 pack of lemon peel (Finesse)
- possibly sugar (pink decorative sugar) for garnishing
- powdered sugar for garnishing
- Flour for the work surface
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 52 minutes
Cream the butter and sugar until creamy. Beat in the egg. Combine the oats, almonds, baking powder, and lemon zest, and stir in. Wrap the dough in foil and chill for about 30 minutes. Roll out the dough on a floured surface to a thickness of about 1/2 cm. Cut out 35 circles (6 cm each). Place on baking sheets lined with baking paper. Bake in a preheated oven at 150°C (fan oven) for about 12 minutes. Let cool. Decorate the cookies with pink icing sugar and powdered sugar, if desired.
