Cookie dough with coconut flour

Ingredients for 1 servings:

  • 2 tbsp coconut drink
  • 10 tbsp coconut flour
  • 1 pinch(s) salt
  • 4 tbsp butter, soft
  • ¼ tsp vanilla extract
  • 1 tbsp brown sugar
  • 50 g chocolate, chopped

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

for snacking

Mash the butter, sugar, vanilla extract, and salt in a bowl with a fork and mix. Add the coconut milk. Slowly stir in the coconut flour, a tablespoon at a time. Refrigerate the dough for about 10 minutes if desired. Chilling firms the cookie dough up a bit and—in my opinion—improves its flavor. Then add the chopped chocolate. If not refrigerated, add it right away. The dough can be eaten immediately with fruit or something similar.
