Vanilla muffins

Ingredients for 1 servings:

  • 150 g sugar
  • 150 g butter
  • 3 eggs, separated
  • 1 pack of pudding powder, vanilla
  • 100 g flour
  • 50 g desiccated coconut
  • 100 g white chocolate
  • 150 ml buttermilk
  • 1 bottle of butter-vanilla flavoring
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 200°C and grease muffin tins well. Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Melt the white chocolate together with the butter and let cool briefly. In a bowl, beat the egg yolks with the sugar and vanilla sugar for about 2 minutes. Add the chocolate-butter mixture and beat for another 2 minutes. Stir in the buttermilk and vanilla extract. Mix the flour, baking powder, pudding powder, coconut flakes and baking soda well and fold in briefly. (Just until everything is well distributed). Finally, slowly and carefully fold in the beaten egg whites. Pour 2/3 of the batter into the muffin tins and bake for about 20 minutes at 180°C (top/bottom heat). Let the muffins rest in the tins for 10 minutes. This makes about 12 muffins, depending on how full the tins are.
