Ingredients for 1 servings:

  • 500 g butter, room temperature
  • 500 g sugar
  • 2 tbsp cream
  • 4 eggs
  • ½ lemon(s), untreated, zest
  • 1 kg flour
  • Flour for the bowl
  • 1 egg(s)
  • 3 egg yolks
  • possibly sprinkles

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Cream the room-temperature butter and sugar until fluffy. Then add the cream and 4 eggs. Gradually mix in the lemon zest along with about 1 kg of flour. Knead by hand until you have a smooth dough. Place the dough in a floured bowl and chill for at least 3 hours. It cannot be made into cookies while warm. After 3 hours, cut off a piece of dough and roll it out to about 1/2 cm thick. Cut out cookies using cookie cutters. Whisk together one whole egg and 3 egg yolks and brush the cookies with the mixture. If desired, you can also add sugar sprinkles or chocolate sprinkles. Bake in an oven preheated to 150°C for about 10 minutes, until lightly browned.
