Ingredients for 1 servings:

  • 250 g flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 115 g butter
  • 225 g white sugar
  • 55 g brown sugar
  • 1 m.-sized egg(s)
  • 1 medium egg yolk
  • 2 tsp lemon juice, freshly squeezed
  • 1 tsp flavoring (lemon flavor)
  • 2 tsp lemon peel, untreated, freshly grated
  • 1 tsp vanilla extract
  • some milk, if necessary

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

simple, quick and delicious

Melt the butter and set aside to cool. Mix the flour with the baking soda and salt. In a second bowl, cream together both sugars with the cold but still melted butter until creamy. Add the egg and egg yolk and mix well. Then add the lemon juice, zest, lemon flavoring and vanilla extract and mix well. Finally, add the flour mixture. Now it’s time to knead! The dough may be a bit dry and crumbly, so you can add another 1-2 tablespoons of milk. Roll out into golf ball-sized balls, place them on a baking sheet lined with parchment paper and press down lightly. Bake for 10-12 minutes at 160°C.
