Pumpkin ragout

Ingredients for 4 servings:

  • 700 g potatoes
  • 1,000 g pumpkin flesh
  • 1 onion(s)
  • 1 bunch of parsley
  • 600 g smoked salmon
  • 4 tbsp margarine
  • ¼ liter vegetable broth
  • salt and pepper
  • 250 g cream
  • ½ tsp ginger powder

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and dice the potatoes. Dice the pumpkin flesh and the smoked pork. Chop the onion and parsley. Brown the meat and onion in the margarine. Add the broth and simmer for about 30 minutes. Add the pumpkin and potatoes and simmer for about 10 minutes. Season with salt and pepper. Whip the cream, stir in the parsley and ginger, and serve with the pumpkin ragout.
