delicious casserole to use up old bread rolls
Finely chop the rolls, pour over the warm milk, and let them soak. Meanwhile, separate the eggs and beat into a foam of butter, egg yolks, and sugar (to taste). Then stir in the bread mixture, spoonful by spoonful. Add the raisins and peeled, finely chopped apples. Finally, beat the egg whites until stiff peaks form and carefully fold in. Pour the mixture into a prepared casserole dish, top with knobs of butter if desired, and bake in a preheated oven at 200°C (top/bottom heat) for about 45-60 minutes. The bread casserole is ready when a nice brown crust has formed. Of course, you can use other fruits like cherries, pears, etc. instead of the apples. You don’t have to add them to the mixture; you can serve them separately as a compote.
