Waffles without flour and fat, low in sugar

Ingredients for 1 servings:

  • 1 egg(s)
  • 100 g ground almonds
  • 10 ml milk
  • 1 tbsp powder (protein powder)
  • a little powdered sugar
  • some stevia powder
  • 1 pinch(s) cinnamon powder
  • 1 pinch(s) of cocoa powder, deoiled
  • possibly grease (separating fat) for the waffle iron

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes

light and tasty, suitable for no-carb diets

Separate the egg. Whisk the egg yolk with the ground almonds, milk, egg white powder, stevia, cinnamon, and cocoa powder. If desired, add a little (max. 1 teaspoon) of powdered sugar to reduce any stevia taste. The batter should have a cake batter consistency, but should drip from the spoon. If it’s too thick, add a little milk. Beat the egg whites until stiff and carefully fold into the previously mixed batter. Preheat the waffle iron and spray it with a little anti-caking oil to prevent the batter from sticking. Depending on the waffle iron, you may not need any anti-caking oil. Bake the waffles until golden brown and serve with apple compote or something similar. Makes about 3 rectangular waffles.
