Chocolate cake sandwich with marshmallow filling

Ingredients for 1 servings:

  • 175 g dark chocolate
  • 115 g butter
  • 210 g sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 160 g flour
  • 25 g cocoa powder, unsweetened
  • ½ tsp baking powder
  • ½ tsp salt
  • 18 large marshmallows

Preheat the oven to 190°C and line a baking sheet with baking paper. Melt the chocolate and butter over a pan of simmering water, stirring continuously. Remove the bowl and set aside. Beat the eggs with the sugar and vanilla extract until creamy. Then add the chocolate/butter mixture and stir in. Mix the flour, cocoa powder, baking powder and salt, sift and stir in. This should only be done briefly, but everything should be well combined. The dough will yield 36 individual cookies and then 18 sandwiches. To do this, take a heaped tablespoon of the dough and place as many as will fit on the baking sheet. It’s best to shape them into an even round, but not flatten them. You also need to leave a gap of at least 3cm between the cookies, as they expand slightly in width. You can also make several baking sheets, depending on their size. Once the baking sheet is full, place the cookies in the oven for about 8 minutes. This depends on the size of the cookies. The dough should spring back in the middle and be baked when you press on it with your finger. Then take the baking tray out of the oven, let the cookies sit for a moment, and then place half of them on a wire rack. Turn the remaining cookies over so that the flat side that was on the bottom is on top. Place a marshmallow on each of these overturned cookies, with one flat side facing down and the other facing up. Then put the baking tray back in the oven and leave it there for about three minutes. Bake until the marshmallows are soft, then take the tray out. Let the cookies stand for about two minutes, then place a second cookie on top of each one. Press them together slightly to form a sandwich. Let them cool completely on a wire rack. They will keep for about a week in an airtight container.
