Spaghetti in ajvar sauce with shrimp

Ingredients for 4 servings:

  • 250 g shrimp(s)
  • 500g spaghetti
  • 5 garlic cloves
  • 5 spring onions
  • Salt
  • Pepper, freshly ground
  • some lemon peel
  • 10 tbsp olive oil
  • 3 tbsp, heaped Ajvar, hot or mild

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

Cook the pasta in salted water according to the package instructions, then drain. Mince the garlic and slice the spring onions into rings. Heat olive oil in a pan and lightly fry the garlic, but do not brown it. Add the shrimp and fry briefly. Add the pasta and ajvar, and mix everything with the shrimp. Stir in the spring onions, heat through, and season with pepper, lemon zest, salt, and chili, if you like it a bit spicier. Serve hot.
