Oat-Ginger Cookies

Ingredients for 1 servings:

  • 1 orange(s), organic
  • 250 g oat flakes, fine
  • 250 g flour (Type 1050), and something to work with
  • 2 tsp baking powder
  • 3 tsp ground ginger
  • 100 g cane sugar, light
  • 1 pinch of salt
  • 60 g butter, soft
  • 60 g lard, white without cracklings
  • 100 g maple syrup
  • 125 ml milk
  • Rock sugar, crushed for sprinkling

Instructions

Working time approx. 1 hour; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

Finely grate the orange zest. Oatmeal can be ground in a food processor. Mix the flour, baking powder, ginger, sugar, salt, and orange zest. Sprinkle the butter and lard in pieces on top. Mix all ingredients into a dough. Add the syrup and enough milk to form a firm dough. Form the dough into a ball and let it rest in the refrigerator for about 30 minutes. Then shape the dough into two logs (about 3 cm in diameter). Cut each into 30 slices. Place them on a baking sheet, leaving 1 cm between each slice, and sprinkle with rock sugar. Bake the cookies in the oven at about 160 degrees Celsius for 15-20 minutes. These cookies will keep in tins for several weeks.
