Ingredients for 1 servings:
- 10 g ginger root, finely chopped
- 150 g oat flakes
- 1 packet of vanilla sugar
- 75 g butter
- 60 g brown sugar
- 1 egg(s)
- ½ lemon(s), untreated, grated zest
- 1 pinch of salt
- 75 g spelt flour (wholemeal)
- ½ tsp baking powder
- g Chocolate coating, dark
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 58 minutes
pleasant light ginger note
Preheat oven to approximately 160°C (fan oven). Lightly toast the oats and vanilla sugar in a hot pan, stir in the ginger, and let cool. Beat the egg and sugar with a mixer until frothy, stir in the butter, then fold in the lemon zest and salt. Mix the flour and baking powder, fold in, and mix with the oats. The mixture may be a little soft at first. Chill for approximately 30 minutes; the dough should then be firm enough to shape by hand. Form approximately 30 cones and place them on a baking sheet lined with baking paper. Bake for approximately 6 to 8 minutes. Once cooled, dip the flat side in chocolate coating and let dry. I made enough for one baking sheet. My oven is relatively hot when using the fan oven, so increase the baking temperature to 180°C (fan oven) if necessary.
