Ingredients for 1 servings:

  • 100 g butter
  • 200 g brown sugar
  • 1 pinch of salt
  • 2 eggs
  • 2 tsp fresh ginger, grated
  • 1 orange(s), untreated, grated peel
  • 2 pinches of saffron powder if needed
  • 300 g flour
  • 1 tsp baking powder

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cream the butter with the brown sugar and a pinch of salt. Mix in the two eggs one at a time. Add the grated ginger, orange zest, and saffron powder, if using. Mix the flour with the baking powder and knead in. Wrap the dough in foil and chill for about an hour. Roll out the dough on a lightly floured surface to a thickness of about 3-5 mm and cut out moons (or other shapes of your choice). Place the cookies on a baking sheet lined with baking paper. Bake in a preheated oven at 160°C fan/convection oven (180°C top/bottom heat) for about 12 minutes until golden brown.
