Marzipan cherry cookies

Ingredients for 1 servings:

  • 150 g butter
  • 125 g powdered sugar
  • 150 g marzipan (raw mass)
  • 2 eggs
  • 1 egg yolk
  • 1 pinch of salt
  • ½ vanilla pod(s), the pulp
  • 150 g flour
  • 75 g cornstarch
  • 50 g jam (cherry)
  • 2 tbsp cherry brandy
  • 50 g chocolate coating (milk or dark)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Mix the butter and sifted icing sugar with 50g of the marzipan (it’s best to finely dice the marzipan beforehand). Add the two eggs, the egg yolk, salt, and vanilla seeds. Then stir in the flour and cornstarch. Fill the dough into a piping bag with a perforated nozzle and use it (or two teaspoons) to place small, roughly equal-sized heaps, leaving plenty of space between them, on a baking sheet lined with baking paper. Bake in a preheated oven at 180°C for about 15 minutes. Then let the cookies cool thoroughly. Mix the remaining 100g of marzipan with the cherry jam and kirsch until smooth. Place a little of this mixture between two of the cookies at a time. Chop the chocolate coating, melt it over a bain-marie, and decorate the cookies as desired.
