Ingredients for 1 servings:

  • 100 g marzipan
  • 200 g nuts, ground
  • 100 g sugar
  • 50 g jam (orange)
  • 3 egg whites
  • 2 tsp gingerbread spice
  • 1 tsp cinnamon
  • 1 pinch of ammonium bicarbonate
  • 15 wafers

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

without flour, makes 15 pieces

Preheat oven to 175°C (350°F) top and bottom heat. Grate marzipan, beat egg whites and sugar until stiff peaks form. Mix the nuts, marzipan, orange marmalade, baking powder, and spices well, then fold into the beaten egg whites. Place the wafers on a baking sheet and place a tablespoon of batter in the center of each wafer. Smooth the batter outward with a knife. Bake the gingerbread for about 15-20 minutes. Cover with chocolate or icing.
