Ingredients for 1 servings:

  • 75 g butter
  • 75 g clarified butter
  • 75 g sugar
  • 30 g breadcrumbs
  • 200 g flour
  • 2 egg yolks
  • some lemon zest, grated
  • some jam (blackcurrant jam, thicker)
  • powdered sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

I got the recipe from my mother-in-law.

Cream the butter and clarified butter until fluffy. Add the two egg yolks, the sugar, and a little grated lemon zest, and stir vigorously. Knead this mixture, along with the breadcrumbs and flour, into a smooth dough. On a pastry board, roll the dough into cherry-sized balls. Using the handle of a wooden spoon, make small indentations in the balls, then fill them with thick blackcurrant jam. Bake in a preheated oven at 200°C for about 20 minutes until golden brown. Dust with powdered sugar while still warm. Store in a container once cooled.
