Ingredients for 4 servings:
- 300 g sugar
- 6 eggs, separated
- 5 tbsp rum
- 50 g candied lemon peel
- 50 g candied orange peel
- 2 tbsp cocoa powder (Kaba)
- 2 tbsp gingerbread spice
- 500 g almonds or nuts
- 25 wafers
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Make a foam from sugar, egg yolks, and rum. Gradually add all the remaining ingredients. Finally, fold in the beaten egg whites. Place the mixture onto the wafers with a tablespoon and bake in the oven at 170°C (350°F) for about 10 minutes. The gingerbread cookies can, of course, be decorated in a variety of ways, such as with chocolate icing or white glaze—it’s up to you.
