Oatmeal ginger cookies

Ingredients for 1 servings:

  • 300 g oat flakes, fine
  • 20 g fresh ginger
  • 150 g butter
  • 125 g brown sugar
  • 2 packets of vanilla sugar
  • 2 eggs, M
  • 125 g flour (wholemeal flour)
  • 1 tsp cream of tartar baking powder
  • 1 pinch of salt
  • 1 tbsp rum

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 1 hour 3 minutes

Peel and finely grate the ginger. Lightly toast the oats and vanilla sugar, add the ginger, and let cool. Cream the butter, brown sugar, eggs, salt, and rum until fluffy. Mix with the flour and baking powder and chill for 30 minutes. Form into cookies or cones. Bake on a baking sheet lined with baking paper at 180°C (fan oven) for about 8 minutes, then let cool.
