Ingredients for 4 servings:

  • 250 g goat’s cheese
  • 70 g pumpkin seeds, peeled (or chopped walnuts)
  • 70 g ground almonds (or chives)
  • Salt

A quick, easy and tasty component for the buffet or as a starter

Squeeze the goat cheese thoroughly into a clean cloth and carefully form the mixture into balls with your hands (clean your hands frequently). Finely chop the peeled pumpkin seeds and roast them in a dry pan until they begin to smell. Transfer them to a bowl, season with salt, and let cool. Roast the ground almonds in the same pan until they begin to smell. Transfer them to a second bowl, season with salt, and let cool. Roll half of the goat cheese balls in the almonds and the other half in the chopped pumpkin seeds. Lightly press the breading onto the balls, cover, and refrigerate. For a buffet, I stick a toothpick into the balls to make them easier to grasp. As an appetizer, I recommend an apple and grape salad (also found on chefkoch).
