Ingredients for 1 servings:
- 120 g raisins (chocolate raisins), e.g. from Alpia
- 60 g fig(s), soft
- 142 g oat flakes
- 85 g flour
- ½ tsp baking soda
- ¼ tsp baking powder
- ½ tsp salt
- 1 ¼ tsp cinnamon
- 1 pinch of nutmeg
- 60 g butter
- 50 g palm fat, soft
- 105 g brown sugar
- 50 g sugar
- 1 packet of vanilla sugar
- ½ bottle of vanilla flavor
- 1 tsp white vinegar, not balsamic vinegar
- 1 large egg(s)
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 11 minutes; Total time approx. 41 minutes
Preheat the oven to 180°C (top/bottom heat). Line the baking sheets with baking mats or parchment paper. Halve the chocolate raisins and cut the soft figs into small pieces. Mix both with the oats. In a bowl, combine the flour with baking soda, baking powder, salt, cinnamon, and nutmeg. Cream the butter with palm fat, the sugars, vanilla extract, and vinegar. Add the egg and continue beating until creamy. Add the flour mixture and stir until well blended. First, stir in the oat mixture with a mixer, then mix the ingredients well again with a spatula. Scoop out small balls of dough with a teaspoon, form them into walnut-sized balls, and place them on the baking sheet. Bake on the middle rack for about 10-11 minutes, then let cool on the rack and store in a container. This recipe makes about 3 1/2 baking sheets.
