Apple red cabbage

Ingredients for 6 servings:

  • 1 head of red cabbage, roughly chopped
  • 1 large onion(s), diced
  • 3 bay leaves
  • 6 cloves
  • 1 tbsp lard
  • ¼ liter broth, smoked
  • 2 tbsp sugar
  • 4 apples (cooking apples), roughly chopped
  • 1 tbsp flour, for binding
  • salt and pepper
  • some vinegar, to taste

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

for the pressure cooker

Sauté the onion in the lard. Add the coarsely chopped red cabbage. Season with sugar, cloves, bay leaf, and pepper. Pour in the broth. Add the apples on top. Cover the pot. When the second ring appears, reduce the heat to low and simmer for 8 minutes. Release the steam and season to taste, first with salt, then with vinegar. Finally, thicken with a little flour.
