Couscous "Fruits of the Sea"

Ingredients for 4 servings:

  • 1 pack of seafood
  • 250 g couscous
  • 300 ml water
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 can of tomatoes
  • 1 tbsp sunflower oil
  • salt and pepper
  • oregano
  • n. B. water
  • e.g. chili powder or cayenne powder
  • e.g. olive oil

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Finely slice or dice the onions and finely chop the garlic. Sauté both in a pan until translucent. Then add the seafood and sauté. Chop the tomatoes slightly if they are whole in the can and add them as well. Pour in a little water. Season with plenty of salt, pepper, and oregano and simmer for about 10 minutes. Then pour in the couscous and slowly pour in at least 300 ml of water. Stir, bring to a boil briefly, then remove from the heat. Cover and let stand for 5 minutes, then stir well again. Season to taste, e.g. with chili or cayenne pepper. It also tastes great drizzled with olive oil. Serve immediately – as a main course or side dish. Or let it cool and use as a seafood salad.
