Risoni salad

Ingredients for 4 servings:

  • 1 bunch of chives
  • 5 m.-large tomato(s)
  • 200 g pasta (risoni or star-shaped pasta)
  • 100 g olives (Kalamata or other black olives), drained
  • 1 tsp, leveled salt
  • some pepper
  • 2 tbsp white vinegar
  • 3 tbsp olive oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

or for the children with star-shaped pasta

Chop the chives, dice the tomatoes, and toss in a bowl with salt, pepper, vinegar, and oil. Chop or slice the olives into small pieces and add them. Cook the pasta according to the package instructions, rinse briefly with cold water, and add to the bowl. Mix well. Add a little more salt and/or pepper to taste. It tastes delicious warm or served well from the fridge as a side dish, or just on its own. The kids love the salad even more with star-shaped pasta.
