Stuffed orange and hazelnut cookies

Ingredients for 1 servings:

  • 200 g jam (orange jam)
  • 200 g hazelnuts, chopped
  • 200 g marzipan – raw mass
  • 250 g flour
  • 2 packets of vanilla sugar
  • 1 pinch of salt
  • 150 g sour cream
  • 40 g sugar
  • 100 g butter
  • 2 egg whites
  • 2 egg yolks
  • 3 tbsp milk
  • Sugar (granulated sugar), for sprinkling

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

For the dough, put the flour, sugar, vanilla sugar, salt, sour cream and butter in a mixing bowl and mix with a hand mixer fitted with a dough hook until you have a dough. Then mix the dough with your hands on a floured work surface until you have a smooth dough. For the filling, put the hazelnuts and jam in a bowl. Grate the marzipan mixture and add it to the dough, mixing all the ingredients well. Roll out the dough thinly on a floured work surface and cut out shapes using a cookie cutter (6 cm diameter round cookies – dough is enough for approx. 74 cookies). Beat the egg whites and brush the edges of the cookies with egg white. Place a teaspoon of the filling in the middle of each cookie, place a second cookie on top and press the edges of the dough down with a fork. Beat the egg yolk with the milk and brush the cookies with it. Sprinkle with sugar and bake at 180°C for 15 minutes.
