Apple curry soup

Ingredients for 4 servings:

  • 2 apples
  • 1 garlic clove(s)
  • ½ tsp ginger, grated
  • 300 g leek
  • 1 shot of white wine
  • 1 tsp curry powder (mild)
  • 500 ml chicken broth
  • 125 ml cream
  • 100 ml coconut milk
  • butter

Working time approx. 25 minutes; Total time approx. 25 minutes

wonderfully fruity and creamy soup

Cut some of the apples into small cubes and the rest into large pieces. Drizzle the small cubes with lemon juice and set aside. Briefly fry the leek, garlic, ginger, and large pieces of apple, then add the curry to the pan for just a short time. Deglaze with white wine, pour in the chicken stock, and simmer until soft. Then add the cream and coconut milk. Blend everything until smooth, strain through a sieve, and season to taste. Briefly toss the previously set aside small apple cubes in butter and add them to the soup as a garnish.
