Walnut croissants

Ingredients for 1 servings:

  • 5 egg whites
  • 150 g sugar
  • 1 packet of vanilla sugar
  • ½ bottle of rum flavoring
  • 375 g ground walnuts
  • 1 egg white for brushing
  • 100 g walnuts, chopped
  • 150 g dark chocolate
  • 1 ½ tsp oil

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Beat the egg whites, sugar, vanilla sugar, and rum flavoring (it’s best to add everything slowly) with the whisk attachment on a hand mixer on high speed until stiff peaks form, just enough so that a knife cut remains. Now fold in the ground walnuts. Reduce the mixture by half in a large non-stick pan over medium heat, stirring constantly. Transfer the egg white mixture to a large plate to cool. Scoop out small portions of the cooled mixture with a teaspoon and shape them into croissants. Brush these with egg white and press into the chopped walnuts. Bake on baking paper in a preheated oven for about 25 minutes. Fan oven 120°C, top/bottom heat 140°C. Then remove from the baking sheet using the baking paper and let cool on a wire rack. Melt the chocolate with oil, dip the corners of the croissants, and let them set again on the baking paper. Delicious and a treat for true walnut fans.
