Tomato and pepper sauce

Ingredients for 4 servings:

  • 3 red bell peppers
  • 1 can of tomatoes, chopped
  • 1 tsp sambal oelek
  • 1 piece(s) ginger root
  • 1 tsp mango chutney
  • salt and pepper
  • some water
  • 200 ml low-fat milk
  • some sauce thickener, light
  • herbs, fresh
  • 2 tbsp oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Cut the peppers into small pieces and fry them in a pan with a little oil. Mix the tomatoes with about 50 ml of milk. Season with the sambal, mango chutney, salt, pepper, and fresh herbs, if desired. Puree the mixture and add it to the peppers. Pour in the remaining milk and simmer for 10-15 minutes, depending on how crunchy you want the peppers. Grate the fresh ginger into the sauce. Simmer for 2 minutes. Add a few fresh herbs and thicken with a little sauce thickener, if necessary.
