Simple, delicious, and unbeatable! Makes 15 walnut cookies.

Cream the soft butter (room temperature) with the powdered sugar, vanilla sugar, and salt until fluffy. Add the flour and roughly chop the nuts, then add and mix briefly. Form the dough into a log (3-5 cm in diameter), wrap it in cling film, and place it in the freezer. If using immediately, remove it after about 15 minutes; otherwise, it will keep in the freezer for about 3 months. Preheat the oven to 180°C (fan/convection oven). Unwrap the log, cut it into slices about 1/2 cm thick, and place it on a baking sheet. Caution: They will spread slightly, so don’t place them too close together on the sheet. Bake for about 10-12 minutes, until the cookies are golden brown, then allow to cool.
