Cinnamon stars – the original

Ingredients for 1 servings:

  • 2 eggs, of which the egg white
  • 250 g sugar
  • 1 ½ tsp cinnamon
  • ½ tsp cherry brandy (or lemon juice)
  • 350 g almond(s), ground
  • 150 g powdered sugar
  • 2 tbsp water

Instructions

Working time approx. 40 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 40 minutes

Beat the egg whites with a mixer (not stiff peaks). Carefully mix in the sugar with a rubber spatula until everything forms a nice dough. Now add the ground almonds and knead everything into a dough. Roll out the dough to a thickness of about 0.7mm-1cm (possibly between two sheets of plastic wrap or on a thin layer of sugar, because the whole thing is very sticky – but super delicious -). Cut out star shapes and place them on a baking sheet lined with baking paper. Let the stars dry at room temperature for at least 6 hours, or even overnight if possible. Then place them in the center of an oven preheated to 250°C for about 3-4 minutes. Immediately, while the stars are still warm, spread them with the prepared glaze (pull them up to the tips with a toothpick or something similar). Cinnamon glaze variation: add approx. 1 tsp cinnamon (for cinnamon lovers) TIP: – use different sized star shapes, results in a beautiful picture – white glaze and those with cinnamon (results in white & brown stars) – decoration with silver beads is also very beautiful
