Spicy potato stew

Ingredients for 8 servings:

  • 1 ½ kg potatoes, waxy
  • 5 large carrots
  • 3 large onions
  • 1 ½ liters of meat broth
  • 500 g sausages (Krakauer or beef sausage)
  • Caraway seeds
  • salt and pepper
  • chili flakes
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Peel the potatoes and carrots and cut into cubes or slices. Peel the onions and slice them into half rings. Heat the oil in a large pot and fry the onions until crisp. Then add the remaining vegetables and fry them briefly. Deglaze with the stock and simmer for 15 minutes. Season with salt, pepper, caraway seeds, and chili flakes. Meanwhile, slice the sausages and add them. Simmer for another 15 minutes. If the vegetables aren’t cooked through, simmer a little longer. Best served hot, but it’s also delicious cold.
