Roasted peaches with cream and almonds

Ingredients for 4 servings:

  • 4 peaches
  • 1 vanilla pod(s)
  • 40 g butter
  • 200 g cream
  • 1 tbsp vanilla sugar
  • 50 g almond flakes

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Halve the peaches and remove the stones, then place the peach halves on a baking sheet lined with baking paper. Halve the vanilla pod lengthwise and then divide the whole pod into 8 pieces. Place 2 of the 16 small pieces on each peach half and top each peach half with a 5g knob of butter. Bake at 200°C (top/bottom heat) for 8-10 minutes. While the peaches are baking, whip the cream with the vanilla sugar until stiff peaks and set aside. As soon as the peaches are done, remove the vanilla pod pieces, preferably with tweezers. Place the hot peaches on the dessert plates and top with the cream and flaked almonds, ideally in front of your guests. Enjoy immediately while hot and watch the cream melt.
